Now known as one of the 'big four' cognac producers in the world (who between then produce around 85% of the world's cognac). Hennessy is the largest of the four, and produce around 70 million bottles of cognac a year. Being a type of Brandy, Cognac falls under the French appellation d'origine contrôlée (AOC) which means there are strict requirements to be called Cognac. These include twice distilling specific grape varieties in copper pot stills and aging for a minimum of two years in Limousin or Tronçais oak casks. The VS (very special) designation denotes that the youngest brandy within the blend has had the minimum two years in casks (it is always the youngest brandy in the blend which gives the designation).  Hennessy VS Cognac is a blend masterfully created from over 40 different eaux-de-vie. It is the Master Blender who oversees this process to ensure the quality.  The result of this blending and knowledge is a full bodied cognac.
