Hennessy VS Cognac The history behind Hennessy goes back to 1765. It was an Irish Jacobite officer who had served in the army of Louis XV that started the Hennesy Cognac Distillery. He had retired in the cognac region where he setup the distillery and began exporting his products to the UK and Ireland. Now known as one of the 'big four' cognac producers in the world (who between then produce around 85% of the world's cognac). Hennessy is the largest of the four, and produce around 70 million bottles of cognac a year. In fact, it was in 1840 that Hennessy became the worlds leading exporter of Brandy, and to this day have not lost that title. Being a type of Brandy, Cognac falls under the French appellation d'origine contrôlée (AOC) which means there are strict requirements to be called Cognac. These include twice distilling specific grape varieties in copper pot stills and aging for a minimum of two years in Limousin or Tronçais oak casks. The VS (very special) designation denotes that the youngest brandy within the blend has had the minimum two years in casks (it is always the youngest brandy in the blend which gives the designation).  Hennessy VS Cognac is a blend masterfully created from over 40 different eaux-de-vie. It is the Master Blender who oversees this process to ensure the quality.  The result of this blending and knowledge is a full bodied cognac. With a renowned smoothness, and a touch of sweetness it has distinct spice notes. The aging in wood gives a light nuttiness to the cognac, which join with flavours of rich dried fruits and berries. These are all rounded out by warming vanilla. Interesting fact: In 1813 Jean Fillioux was appointed Master Blender. A member of the Fillious family has kept this role ever since - more than 250 years and a total of eight generations! The name actually name comes from the location of the distillery, situated in the glen of the river Fiddich. In scots gaelic Glenfiddich means 'valley of the deer', hence the stag found on the bottles. This whisky has been produced since 2008 and is awarded the world over. It's also the most awarded at the IWSC and claims the distinction of being the world's best-selling single-malt whisky. It's known for both its freshness and distinctive fruitiness, both a result of its production methods. The freshness comes from the highland spring water (used since 1887), and the fruitiness form the high cut point which was insisted on by William Grant himself.  The maturation occurs in both american oak, and european oak sherry casks for at least 12 years. Don Julio Reposado Don Julio González didn't have much, but what he did have was passion, and a dream. It all started back in Mexico in 1942 when he saw a unique opportunity in the production of tequila. After sharing his vision and securing a loan with a powerful local businessman, Don Julio opened his first tequila distillery in La Primavera, in the Jaliscan Highlands. It was his passion that inspired the world's first luxuary tequila.  Each day for 40 years, Don Julio would walk along the agave fields, cutting the grass around each plant (which were more like his children than a crop) to protect them. He'd harvest each plant individually, choosing those with the most optimum maturity and health and would expertly balance the bitter flavour of the piña (the heart) and the sweet leaves of the agave. The climate in the Jaliscan Highland's is the perfect microclimate for the blue agave, with warm days, cool nights and rich clay soil. The high altitude made farming and harvesting a challenge. It was physically demanding, but Don Julio endured the extreme conditions to create a luxuary tequila with exceptional substance and indisputable spirit. Don Julio Reposado Tequila is a soft and elegant aged tequila. The base is made using Don Julio Blanco, a tequila in it's truest form, unaged, double distilled and made with the finest blue agave using a time honoured distillation process. It is rested in American white oak barrels for 8 months, resulting in a tequila giving a golden amber colour and a rich and smooth finish. On the nose, there are inviting aromas of mellow lemon citrus, layered spice and a touch of ripe stone fruit. An Dulaman Santa Ana Armada Strength Gin 50cl

An Dúlamán Santa Ana Armada Strength Gin Located in the far north west of Ireland, on the rugged atlantic coast, An Dúlamán gin is made in the shadow of Sliabh Liag (a mountain in County Donegal). The Armada Strength gin is created from a base of the original An Dúlamán Gin, which is then barrel aged in Spanish Rioja casks before being bottled at a higher alcohol Navy Strength. This is the first navy strength gin to be produced in Ireland. The base An Dúlamán Gin is created using eleven different botanicals - which give it a maritime feel. Six of these are the 'conventional' gin botanicals, including juniper berries. However it is the other five, which give this gin its sense of place (and helps with the name). Five different varieties of locally harvested seaweed capture the “Draíocht na Farraige” or 'magic of the sea'. These five seaweeds are: Carrageen Moss, Dulse, Sugar Kelp, Channel Wrack and Pepper Dulse. The aging of this gin in Rioja wine casks further enhances the gin, adding both a rose gold hue and a slight sweetness to the complex maritime notes of the original.  The name itself comes from one of the many ships which crashed on the Irish coast. In particular for this gin; La Duquesa Santa Ana, which ran aground off Loughros Mór near Ardara in Donegal. The commander (Alonso de Leyva) was a nobleman from the Rioja region of Spain - which is where the inspiration for the aging process came from. On the nose there are defined fruit and sweetened oak notes, brought from the casks - as well as a comforting wave of umami (savouriness). On the palate this is exceptionally soft and smooth (particularly surprising considering the high ABV). Salty maritime notes come through joined by warming spices and peppery juniper. These are rounded out by a hint of anise, and fruity berry notes from the cask aging. It's finish linger in the mouth, and leaves a warming hint of orange. More from An Dulaman Perfect Serve This is delicious in a gin & tonic, and we find it works best (in our opinion) with a neutral tonic - and we liked Three Cents Tonic Water. It can also be enjoyed simply on the rocks, with a twist of orange peel. Take a large glass and fill with ice. Pour in 50ml of the gin, and then gently pour over 200ml of your chosen tonic. Stir gently and garnish with a slice of orange.
