Hayman's Gently Rested Gin In 1863 when James Burrough, opened a small distillery in Chelsea, London. He experimented with a number of gin recipes, giving them names such as Burrough’s, Olde Chelsey, Beefeater and Black Cat. It was James who poineered the London Dry gin which is known and loved today (at that time, London's gin of choice was Old Tom). It was this which led to the development of the Beefeater Gin brand.... but it also spurred the Hayman's gin brand. The current Master Distiller of Hayman's (Christopher Hayman) is the great grandson of James Burrough. For their Gently Rested Gin Hayman's looks again to history. Gin always used to be rested in casks during the Gin Palace heyday of the 1800's, and so again Hayman's repeats history and uses old Scotch Whisky barrels to rest their gin in for a period of three weeks. The result of this short (gentle) resting period lifts the botanical flavours in the gin, enhancing the peppery spice notes.  The result is a really smooth, well-rounded balanced gin. It has peppery and spicy notes from the dominant botanicals – juniper and coriander – which add to its full-flavoured individuality. Bareksten Old Tom Gin Produced by Oss Craft Distillery in Norway, Bareksten Old Tom Gin, like the rest of the Bareksten family, has been made to represent the true essence of Norway. It is dark, wild, breathtaking and dramatic in the look of the bottle, the aromas as you open it, and the taste when you drink it.  Bareksten takes its inspiration from the Norwegian Forests. The long days of sunlight in the summer, combined with ample rain and warm weather ensure perfect growing conditions for a number of herbs and berries. These Nordic, natural and organic herbs, potatoes and berries form the basis for the unique flavour of Bareksten. Slightly sweeter than their Botanical Gin, the Old Tom Gin has more subtle nuances and doesn't overwhelm with the juniper influence. On those nose this is distinctly juniper led, with earthy aromas and floral hints.  The taste is full-bodied, with a pleasant spiciness to it. Whitley Neill Quince Gin With a taste for adventure and discovery running through all eight generations of the Whitley Neill family tree it should come as no surprise that at the turn of the century, Frederick Neill found himself on a voyage through Persia. Here he discovered a whole range of exotic spices, herbs and fruit. These led to new inspirations to be added to the family gin collection. Discovering quince in the ancient mountains of the region, inspiration was found. Combining the tang of Turkish quince with a select mix of Persian herbs and spices makes Whitley Neill's Quince Gin something unique and quite special. Within this gin you are welcomed with the aroma of fresh stone fruits. These are followed shortly after with a gentle hints of juniper and citrus zest. Within the mouth, the distinctive flavour of quince dominates the palate - but this develops and introduced the sweetness of apricots and peaches. Blacks Citrus Smash Gin Located on the Wild Atlantic Way (a scenic route in the south of Ireland), The Blacks Brewery was started in 2013. A family run company, it is owned and operated by Sam & Maudeline Black (hence the name!). Their ethos was to create (initially) beers which weren't mass market. They wanted products with passion and personality. In 2015 they decided to expand and added a state-of-the-art distillery which allowed them to produce spirits as well. Their first was gin, which was followed in 2018 with the first Irish Rum, and then in 2020 with whiskey. The inspiration for their Irish Gins come from their location as well, the picturesque and rugged Wild Atlantic Way. They wanted to create a range of modern Irish gins, which had a Wild Atlantic twist, as well as a delicious infusion of citrus and spice. With their Citrus Smash edition, part of the expansion to their fantastic original gin, they have taken three different citrus fruits (Pink Grapefruit, Seville Oranges and Sicilian Lemons) - and 'smashed' them together to create something seriously refreshing. The obvious solution was of course to create Amsterdam’s first tequila brand. LALA Tequila is made with 100% agave in the heart of the tequila region, in Jalisco, Mexico.
